Flour, water, salt, time. Our dough ferments cold for seventy-two hours until it turns light, open and faintly sweet — then it's stretched by hand and slid onto the stone floor of a live wood fire.

  • 72-hour ferment. Slow-risen for flavor and an airy, digestible crumb.
  • Live wood fire. Oak-fired stone that chars the rim and sets the cheese.
