Wood-Fired · North Fairfax · Los Angeles
Seventy-two hours of dough. Ninety seconds of fire. A neighborhood pizzeria built around the oven.
We do one thing, and we do it over a live flame.
Flour, water, salt, oak and time — nothing else gets near the oven.
The Craft
Hand-stretched — never rolled
Flour, water, salt, time. Our dough ferments cold for seventy-two hours until it turns light, open and faintly sweet — then it's stretched by hand and slid onto the stone floor of a live wood fire.
“You should be able to smell the oven before you reach the door.”
Fri + Sat
until 1 AM
Low light, cold drinks, a pie in the middle of the table and no one checking the time.
